A huge tip that will make baking gluten free almost fun is to throw out your expectation of what bread should be. Nothing will be like it was in the past.
Gluten-free bread dough will be the thickness of pancake batter in order to bake well. The first time you mix gluten-free bread you will think that you made a mistake. Now, just like you did in the past, you add more flour. If not, your loaf of bread would be so hard and dense that you wouldn't be able to cut it with a chainsaw.
Have fun experimenting and mixing different flours together. Learn how to find the flour that works best for you. Once you have found the best mix, and you will, put it in a container and use it for making cookies, quick breads, cookies, pancakes, waffles, and biscuits. Life will be so wonderful and easy.
