Breakfast Recipes for Type 2 Diabetes

Fresh and light fruit & cucumber salad with herbs

A great summertime breakfast.

  • 1 cantaloupe, cubed
  • 1 honeydew melon, cubed
  • 5 C strawberries, halved
  • 2 cucumbers, peeled and chopped into 1" pieces
  • 1/4 C orange juice
  • 1/4 C chopped fresh mint
  • 1/4 C chopped fresh basil
  1. Combine all fruit and cucumber in a large bowl.
  2. Drizzle with orange juice.
  3. Stir in herbs. Let sit for at least 2 hours and serve.
