Breakfast Recipes for Type 2 Diabetes
Fresh and light fruit & cucumber salad with herbs
A great summertime breakfast.
- 1 cantaloupe, cubed
- 1 honeydew melon, cubed
- 5 C strawberries, halved
- 2 cucumbers, peeled and chopped into 1" pieces
- 1/4 C orange juice
- 1/4 C chopped fresh mint
- 1/4 C chopped fresh basil
- Combine all fruit and cucumber in a large bowl.
- Drizzle with orange juice.
- Stir in herbs. Let sit for at least 2 hours and serve.
