“It interests me really because it’s very personal to me. I do have celiac disease so I was going through that whole process of trying to figure out like why I’m sick and why certain foods that I’m eating are causing inflammation or all sorts of things,” said Mattero, 23, of Wharton.

Studying nutrition became something of great interest for Mattero, an interest heavily driven by her experience with celiac disease first hand. Lena’s aunt, a Doctor of Nursing Practice, took notice of her interest in learning how different foods affected different diseases and inspired her to become a registered dietitian.
