Have you tried Tuscan kale? Tuscan kale, or lacinato kale, is much softer and more tender than traditional kale, making it a great addition to shortly-cooked dishes to add a ton of flavor and nice texture. It's perfect for people who want the nutritional benefits of kale but don't like the rough texture and bitter flavor.
If you like stir-frys or veggie sautees, add a bunch of Tuscan kale right in the last few minutes (chopped, stems removed).
