Egg yolk therapy: A new theory that the antibodies in egg yolks can neutralize gluten
The idea behind this research is that the antibodies present in the yolks of chicken eggs can neutralize gluten. Theoretically, this helps celiac disease patients to have a bit of protein in their diet. “The product intercepts gluten before it can act on the sensitive part of the gut in people with celiac disease,” explains Hoon Sunwoo, associate professor at the University of Alberta, Canada. By no means can this be a cure for the disease but an adjunct to the gluten-free diet. Being that protein helps the body to repair cells and make new ones, this added benefit would help in the daily life of celiac patients.
