Recipes for Kids with Cystic Fibrosis

People with cystic fibrosis have sticky mucus in their digestive systems. They typically need to take enzymes to digest food and medications to stay regular. People who have CF and take digestive enzymes can usually eat pretty much the same foods as people without CF. However, people with CF usually need to eat more calories each day than people who do not have it. Eating nutritious and high-calorie foods is important to maintain weight and provide energy. By eating healthy foods, a person with CF can also have a stronger immune system and stronger muscles to breathe.

For people with CF, their nutritional needs are determined by the severity of their disease, their activity level, and their degree of malabsorption. Although individuals with CF usually need about 1 to 2 times as many calories as those without CF.

The following 5 recipes developed by KidsHealth were designed specifically for kids with CF who have additional calorie needs in order to satisfy all of their nutritional needs and to help keep them healthy and energized.

Those who suffer from cystic fibrosis are known to have a sticky kind of mucus in their digestive system hence these individuals mostly need to take in certain enzymes to get the food digested and also should be regular with their medications. The nutritional needs of a cystic fibrosis patient are basically determined on how severe the disease is along with the degree of malabsorption of essential nutrients. Below mentioned are few of the recipes which have been designed especially for kids who suffer from cystic fibrosis and also would need those extra calories for satisfying their nutritional needs.

Alfredo Pesto Pasta: For this recipe, you would need1/4th cup of fresh basil leaves, two cloves of garlic, ½ a cup of Parmesan cheese, 1/3rd cup of walnuts, ½ a cup of heavy whipping cream, 3 tablespoons of olive oil and eight ounces of fettuccine which has been cooked. To start preparing this recipe first chop finely garlic, basil and walnut in a food processor and slowly add olive oil while the machine is running and process it until the mixture becomes smooth. Now add 1/4th cup of parmesan cheese. Transfer the pesto on to a jar. Pesto is something which can be prepared 3 days in advance. You can also pour enough of olive oil sauce to cover it and then refrigerate it until you would need to use it. In a medium saucepan, add cream and bring it to boil but be careful not to burn the cream. Once the cream starts to boil you can whisk the it in the pesto. Now season sauce with the remaining of the 1/4th cup of parmesan cheese in the large bowl. Toss for coating the pasta evenly and serve it. This recipe would make for two servings and each serving size would be1 ½ cup.

Baked Beans: This dish would be an ideal dish for a perfect holiday barbecue. The total preparation time including the cooking time would be two hours and twenty minutes. The ingredients to be used in this dish are 1/4th cup of onion which are finely chopped, ½ cup of green pepper which has been finely chopped, 1/3rd cup of brown sugar, ½ tsp dry mustard powder, six slices of cooked bacon which can be cut into one inch pieces, 1/4th cup ketchup, 16 ounces of beans and pork and 1/4th tsp of Worcestershire sauce. For preparing this dish, you should first mix all the ingredients in a baking dish. Ensure that the beans are not drained out. Place the dish in the oven and let it bake for two hours at 162 degrees Celsius or 325 degrees Fahrenheit. This dish would be ideal for serving five people and each of the serving size would be 3/4th cup.

Apart from the two recipes mentioned above, there are other dishes as well which can be given to kids and those are Cheesy mashed potatoes, bacon and cheddar quiche, Beef Stroganoff, macaroni and cheese.
