You only need one functioning kidney, and any abdominal surgery has a 10% lifetime risk of developing obstructions due to adhesion - most of which can be managed non-operatively. To answer further I would need to know why you were have the kidney removed.
Yes, it's possible, since the kidney is an endocrine gland as well.
