How do chiropractors adjust ankles?

I am a 28 year old male. I want to know how do chiropractors adjust ankles?

There are many adjusting techniques within the world of chiropractics. There is one called "motion palpation," which is where the individual joints (in this case, in the ankle) would be palpated (i.e., checked) for "normal" joint motion. Those joints which are fixated (stuck, not moving as they should) would be adjusted (freed up, so that "normal" motion, or at least better motion) is achieved. Also, joints which have become hypermobile (move too much) should be taped to immobilize that/those joint(s), to allow those joint(s) to stabilize.
There are several ways to adjust the ankle depending on the distortion pattern or malposition of the joint(s). Very often, the physician will hold the foot below the ankle and create a long axis distraction followed by a quick pull to the mortice joint to adjust that particular joint that is involved in dorsiflexion and plantar flexion of the foot. Many patients find that adjustment extremely helpful.

Some chiropractors will adjust the ankles with their hands, others will use an instrument. They go through many years of training and practice in order to learn how to do this safely. If you have a problem with your ankles, get it checked by a professional who will take a detailed history and do a thorough examination.
There are two main ways... some sort of By Hand push or pull maneuver or Instrument assisted where a small rubber tip the size of a pool stick tip, is placed on the spot needing motion and then a tapping motion is put thru joint space usually several times. If you have a history of torn ligaments from bad sprained ankles, go with the second method.
There are several techniques to adjust ankles, which usually involve traction of the ankle and dorsiflexion of the foot (pulling the ankle while the toes are flexed up).
