My grandmother had a stroke, and is in occupational therapy to improve the strength in her hands. What exercises are usually done that will help her?

Occupational therapy offers many ways to help people recovering from stroke, and can be particularly beneficial in the very early phase after the event. I encourage you to seek out an OT with speciality in treating stroke and other neurological conditions.
