A Guide for Foodies with Celiac Disease

Remember, there is always a risk

Wheat-free doesn't necessarily mean gluten-free.

Celiac disease and wheat allergy are terms that are used interchangeably by those who do not have either condition. Celiac disease is an autoimmune disease that causes the body to attack itself once gluten is consumed, mainly involving the small intestines. A wheat allergy, on the other hand, is a condition that only refers to the body's rejection of foods that contain wheat. "Wheat-free food" is different from "gluten-free." Wheat-free foods are safe for patients with a wheat allergy, but they are harmful for celiac patients.
